Recipe: Crowd-Pleasing Creamy Lobster Dip
Picture the scene: you've been invited to a dinner party last minute. You're stuck at work and have no time to go to the grocery store before you get home. What can you whip up with ingredients that you already have that will be tasty and not look thrown together last minute?
Enter: creamy lobster dip.
This lobster dip is my go-to for dinner parties, housewarmings, potlucks - pretty much any event in which I have to bring food.
Sometimes, I also just enjoy it on a solo girl's night in.
This is not your average chip dip. Baking this in the oven for a few minutes lets the lobster flavours really sink in, completely elevating the flavour profile of the dip. And the extra cheese on top? *chefs kiss*
Fair warning, you'll probably be getting A LOT of dinner party invitations after you start bringing this dish around...
Creamy Lobster Dip
I promise that this tinned seafood dish will be the hit of your next party. Adding tinned lobster to a cheesy, creamy nacho dip will elevate the flavours and you’ll never go back to plain old chip dip again.
TOOLS
Medium size mixing bowl
Ovenproof dish
INGREDIENTS
1 can of tinned lobster (I love SCOUT Canning's lobster)
1 package of cream cheese at room temp.
1/2 cup dried herbs like parsely, basil, and dill
1 lemon
1/4 cup parmasean cheese or grated white cheddar
DIRECTIONS
Pre-heat the oven to 350 degrees
Drain and chop tinned lobster into small cunks
In a stainless medium mixing bowl, whisk together the cream cheese, lobster, fresh herbs and juice of one lemon.
Place into an ovenproof dish and top with your cheese of choice
Bake at 350 degrees for 15-20 minutes or until it starts to brown on the edges
Serve this with a fresh baguette. I recommend slicing the baguette and brushing it with a bit of olive oil and any remaining oil from the tinned lobster. Bake it in the oven for about 5 minutes and serve.
