Easy, sustainable tuna fish fritters
Canned tuna is versatile and exciting (yes, you can make more than tuna sandwiches with it!) and this tuna fish cake recipe is proof. This delicious fritters are simple, easy to make, and super affordable. AND they taste amazing!

- 1 tin of Ocean's chunk light tuna
- 1 egg
- 1/2 cup corn
- 2 tbsp flour
- 1/2 bunch of parsley, finely chopped
- 1/2 red onion, chopped
- 2 tsp chili flakes
- juice from 1/2 lemon
Combine all ingredients together in a bowl and stir well.
Heat 2 tbsp of olive oil in a frying pan.
Shape the mixture into 1 inch thick patties.
Fry for three minutes on each side or until golden brown.
Serve with tzatziki.
