You know those days when you are just absolutely slammed with back to back meetings and feeling like you can’t even find a minute to breathe?

I know those days pretty well. Things at Seaside headquarters have been getting very crazy. There are so many new projects in the works! But I constantly find myself slammed on weekdays with little time to do anything, especially make a healthy gourmet lunch.

Which is why I have mastered the art of lazy cooking. Weekday lunches are usually pretty basic for me – I like to keep it quick and simple, but still make sure that I’m eating a healthy meal that will contribute to fuel my body throughout the day.

This is one of my go-to balanced lunch recipes that takes less than ten minutes to make and contains a good amount of proteins, fats, carbs, Omega3-s, and other nutrients.

This is just a pretty simply pasta salad with tuna added. Ocean’s Seafood is my go-to for days like this when I don’t need anything fancy, but I just want that familiar, good-quality tuna to throw into something like a pasta salad.

And while Ocean’s has a wide range of seafood products (you might remember me talking about their MSC certified, flavoured tinned tuna in oil before!), their most basic tuna product is now MSC certified!

Ocean’s Chunk Light Tuna now comes from MSC certified fisheries that have good fisheries management plans, healthy stock levels, and use low impact gear types.

Honestly, with tinned seafood becoming more and more trendy, it’s not uncommon to see cans with price tags up to $20 each. So I appreciate having an affordable, sustainable option that I can turn to on busy days and still know that I’m making a responsible seafood choice.

Quick and Healthy Tuna Pasta Salad

Made with leftover pasta and packed with veggies, this Mediterranean inspired tuna pasta salad is my go-to lunch on busy weekdays.

Equipment

  • 1 bowl to mix salad in
  • cutting board
  • chef's knife
  • pot to boil pasta in you can also use leftover pasta if you have some around

Ingredients
  

  • 1 cup cooked pasta
  • 1 can Ocean's Chunk Light Tuna
  • 2 tbsp chopped red onion
  • 1 cup cherry tomatoes
  • 1 chopped cucumber
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley
  • 2 tbsp crumbled feta cheese optional

Instructions
 

  • If you don't already have cooked elftover pasta available, boil the pasta according to package instructions.
  • Meanwhile, chop the veggies and add them to a large bowl.
  • Combine with the tuna.
  • Once the pasta is cooked, rinse it under cold water and let it drain thoroughly. Add it to the bowl with the other ingredients.
  • Add olive oil, parsley and feta cheese to the bowl. Mix well.
