Some might think that seafood is a summer food, but during the colder winter months, I love incorporating seafood into some hearty comfort food dishes, like risotto.

This seafood risotto is perfect for winter – cheesy, filling, and comforting.

And it’s super simple to make. Risotto always seems like a way fancier dish than it actually is. While it can be a bit time consuming and requires constant stirring, the recipe itself is straightforward.

I love making this whenever we have company over because it’s always a crowd pleaser and guests are thrilled by the thought of enjoying such an elegant dish.

What seafood is best for seafood risotto?

One of the reasons that I love cooking with seafood so much is because it’s so versatile. You can use whatever seafood you prefer for this risotto. I’ve made it with shrimp, scallops, mussels, and in this recipe, I’m using Atlantic salmon.

The salmon that I’m using is from Mowi, the world’s largest producer of farmed salmon. Their sustainably raised salmon products are available online and in Walmart’s across Canada.

I love using their salmon for this risotto because it’s so high quality and flavourful, plus it’s packed with protein which helps to round out the nutritional profile of this meal. Mowi’s operations are also certified by the Aquaculture Stewardship Council (ASC) an independent body that establishes protocol on farmed seafood while ensuring the sustainable growth of the aquaculture industry. The ASC provides producers with a certification of environmental sustainability and social responsibility. Mowi has achieved this certified in 100% of their operations, which makes me feel really great since i know that their operations are not contributing to environmental pollution or human rights abuses.

Seafood Risotto

This hearty, high-protein seafood risotto is perfect for a cold winter evening!

Ingredients
  

  • 2 cups arborio rice
  • 1 portion Mowi Atlantic Salmon
  • 1 onion
  • 3 garlic cloves (minced)
  • 1/2 cup white wine
  • 8 cups vegetable broth
  • 1 cup frozen peas
  • 1/2 cup parmesan cheese
  • juice from half a lemon
  • salt and pepper to taste

Instructions
 

  • Begin by removing the Atlantic Salmon portions from packaging. Set aside on a plate and lightly salt.
  • Chop onion and garlic cloves.
  • Heat 2 tbsp. of oil in a large pot on medium-high heat. Add chopped onion and garlic. Stir until fragrant.
  • Add in Arborio rice and toast for 1-2 minutes.
  • Add white wine and stir well.
  • Begin adding vegetable brother, 1/2 cup at a time. Add 1/2 cup of vegetable broth and stir consistently. When brother has simmered down, add the next 1/2 cup. Repeat until all 8 cups of brother have been added.
  • Meanwhile, season salmon with salt, pepper, and lemon. Bake in the oven at 375 degrees for 15-20 minutes.
  • Right before the risotto is finished, stir in frozen peas and Parmesan cheese.
  • Top risotto with salmon and serve.
